Wild Bake is predominantly a wood-fired pizza outlet and the pizzas are a big hit with the customers.

Wild Bake is the brain child of Lewis Cole, a former chef for 15 years, who was inspired by visits to France. “I had noticed a lot of pizza vans visiting local towns and villages, very much like a fish and chip van does in the UK. It dawned on my there was a niche in the market, particularly in Cornwall for a mobile pizza van that visited towns on a weekly basis.”

He wanted to create something different, quirky and unique as well as being of exceptional quality; so he made a wood fired oven and bought a horse trailer to trade from. The horse trailer means that he can access some really cool out-of-the-way places.

The ethos is to produce simple, delicious wholesome food at an affordable price. Lewis is passionate about using local produce and supporting local suppliers as much as he can, which all translates into the foodie experience. He also loves to forage and have often used foraged ingredients to produce some tasty treats at Wild Bake. Such is the cult-like following of Wild Bake the horse trailer is out whatever the weather so that fans can have their weekly pizza fix!

Lewis’s day starts at 9am in his kitchen at home. He starts by making dough, although he used to do all of this by hand he has recently invested in a dough mixer to take on over 35 kilos of pizza base! He lights the fire in the oven an hour before he starts and then is usually on the streets from 5-10pm.

All of the spots that you find Wild Bake are special but a favourite is Padstow Touring Park. These guys were the first people Lewis approached back when the idea of mobile street food was just a glint… The first-ever night of trading took place there and it continues to be a favourite spot.

Wild Bake is predominantly a wood-fired pizza outlet and the pizzas are a big hit with the customers. You’ll find a standard pizza menu with a special that changes every week. The special is guaranteed to use whatever ingredients are in season that month and will often include foraged goodies. For those sweet-toothed gluttons Wild Bake also make a pudding pizza.
