Scottish-born, his heart is now in Penzance, where a few years ago he single-handedly transformed an empty space into what is now the beautiful Shore Restaurant. Combining his enchantment with the sea with his years of experience, he has truly created something very special.
Working in the industry for over 25 years alongside some of the country’s biggest names, Bruce has a deep passion for flavours and textures. Remembering them, cultivating them and commanding them, he uses them to perfectly complement and contrast each other in a way that would leave other culinary creatives wide-eyed in envy.
Stepping inside the Shore itself, a cool colour palate with nautical inflections licks the walls creating a calm, serene environment so as not to detract from the food or dining experience. A modestly sized space, it is both classy and laid back, professional yet friendly, perfect for lending a sense of occasions to meals. And, with one-man band Bruce flying solo in the kitchen and often tending to front of house too, there is a real feel of considered, bespoke service.
Forging a connection between land and sea, the menu offers exciting new combinations and twists on classic favourites, largely fish and seafood based. The measure of all first-class restaurants, Bruce adapts the menu using ingredients available each day. Source the highest quality and freshest fish from Newlyn market daily, the emphasis on sustainability, quality and community is evident.
As well as fresh fish each day, Bruce also uses vegetables and fresh herbs from Cornish farmers, and some from his very own garden too. He also arrives early each morning to make fresh bread and personally prepare all ingredients. Celebrating Cornwall and its bountiful country and coast, Bruce determines to always stays as local as possible and supports a simple yet sound philosophy: the better the ingredients, the better the experience.
